I want to host email elsewhere and change MX Records in my DNS Zone, how can I do that?

If your domain uses our name servers, and you are hosting on a cPanel shared/reseller servers, then you can make changes to MX Record(s) for the domain hosting in your account. This is done by logging into cPanel and clicking on MX Entry under Mail section. Here's a tutorial that explains how to do make changes to MX records: http://webx.net/mx-record-email-cpanel/

After checking the tutorial, if you are still unsure how to proceed, please feel free to open a support ticket.
